Lady Balfour is the first potato variety bred specifically to be grown under organic conditions. The variety is named after Lady Eve Balfour, a pioneer of the organic movement and founder of the Soil Association in 1946.
An oval to long oval potato with white / cream skin with pink eyes and white flesh. High yielding. General purpose, salad type. Good for boiling. Low to medium dry matter.
Dormancy is exceptionally long, allowing long term storage without the use of sprout suppressants, making the variety ideal for both commercial organic production and the amateur gardener!

I know they always say they are splendid when roasted but for my money they are best gently steamed till the psychological moment of perfectly cooked. Then you get the full floury tastiness of roasted chestnut and you wish you had cooked twice as many."
